Berry Cobbler

Berry cobbler has quickly become a family favorite. It’s easy, with very little clean up. Below is my version of cobbler, although there are many out there, this is my favorite.

Start by tossing your choice of berries with some sugar. This isn’t a necessary step but I’ve found it helps release the juices of the berries to create that lovely pie-like filling. Add the berries to the bottom of a 9-inch pie or tart pan. In a separate bowl mix flour, baking powder, sugar, melted butter, milk, and vanilla. Pour the mixture over the berries and sprinkle Demerara sugar on top. Bake at 350 for 50 minutes to an hour.

Serve hot with whip cream or ice cream. Cover leftovers with plastic wrap and store in the fridge for a week.

Description

This cobbler is the perfect dessert with any savory dinner. 


Ingredients

Filling

  • 3 C. Berries 
  • 2 tbsp Sugar

Cake Topping

  • 3/4 C. Flour
  • 1 TBSP Baking Powder
  • 3/4 C. Sugar
  • 3/4 C. Milk
  • 6 tbsp Melted Butter
  • 1 tsp. Vanilla Extract 
  • Demerara Sugar to sprinkle on top


Instructions

Preheat oven to 350 degrees Fahrenheit. 

Toss berries and sugar together in a bowl then pour the berries into a 9-in pie dish. 

In a separate bowl mix the flour, baking powder, sugar, milk, melted butter, and vanilla. Pour the mixture over the berries. 

Top the flour mixture with Demerara sugar.

Bake at 350 for 50-65 minutes or until gold and bubble. 


Notes

Give the cobbler a little shake before taking it out of the oven. If it jiggles, it isn’t done baking, so bake for additional 5-10 minutes.
