A Family Favorite

Shrimp scampi is probably my husband’s favorite dish. It’s quick and delicious. It’s a meal we can throw together quickly and don’t have to run to the store. Since we love shrimp scampi so much, we typically have everything on hand.

My kids aren’t keen on shrimp yet so we simply pick them out before serving.

I prefer this dish a little more spicy and cheesy while my husband prefers more cream. Luckily, we can add more of our favorite ingredients while they are on our plates. I’ll make the entire dish according to the recipe below but then I’ll add some more cheese and hot sauce to my own plate.

Do you have to use shrimp?

Definitely not! You can substitute shell fish, chicken, or no meat at all. The sauce is easily catered to taste, so whichever protein you choose, you can alter the flavors a bit.

What to serve with Shrimp Scampi?

We love the Red Lobster Biscuits, garlic knots, or Texas Toast as a side; a green veggie side is also a must for our family. We typically choose green beans and broccoli.

Shrimp Scampi

Ingredients

1 small onion, chopped

2 cloves of garlic, chopped

1 lb shrimp

2 tbsp butter

8 oz angel hair pasta

a few dashes of hot sauce

1 tbsp. lemon juice

1/2 C. white wine or chicken stock

3/4 C. parmesan cheese

Parsley to taste

a splash of cream


Instructions

  1. Set water to boiling in a medium-size pot. 
  2. Heat a large pan on medium heat. Add butter and chopped onions. Once onions are translucent, add garlic. 
  3. Add deveined shrimp to the pan. They will cook very quickly. 
  4. Once the shrimps are all pink, add wine or chicken stock to the pan. Simmer until the liquid decreases by half. 
  5. While the contents of the pan simmer, add pasta to the boiling water. They only take a few minutes to cook. 
  6. Strain pasta.
  7. Add pasta, cheese, and hot sauce to the shrimp pan. Stir constantly so the pasta and shrimp get coated in the delicious sauce. Add cream and parsley just before serving. 

Notes

You can add basil in addition or in place of parsley. 

Feel free to add as much or as little cream as you like. My husband loves extra cream but I prefer almost no cream. Both are delicious but we all have our preferences. 

Reheat instructions: Reheat on the stove. Add extra cheese and cream to prevent the sauce from splitting. You can also add more hot sauce and herbs.
