Roast beef, this is a recipe with traces far back into my memory. My mom often made this on Sundays when I was a child. I remember coming home from church and the smell of roast beef invaded my senses as I walked in the door. What a dream that always was! I’m happy that I’ve continued this in my family today.
Crock pot roast beef is incredibly easy–so easy that it’s difficult to mess up. My favorite cut for this is chuck roast, it’s typically cheaper than others but also fatty enough to add great flavor. My mom uses salt and pepper for seasoning and adds potatoes, celery, carrots, and onions to her roast, which I love. However, my mother-in-law doesn’t add vegetables; she uses an Italian dressing packet and au jus sauce packet for her seasonings. Which do I prefer? My mother-in-laws recipe! So that is what I’ll be sharing today. As always, feel free to add whatever vegetables you’d like to this recipe, I’m sure it will be delicious.
Crockpot Roast Beef
- Add roast beef to crockpot with spices, herbs, and/or vegetables.
- Cook on low for 8-12 hours.
- Cut and serve!
To sear or not to sear. I’ve done it both ways and I prefer searing the meat before putting it in the crockpot. However, I almost never do it for the sake of time and ease. Without searing the meat will still result in a tender and juicy roast, as long as you cook it for at least 8 hours.

Ingredients
- 3lbs Roast Beef (I prefer chuch roast.)
- 1 c. water
- 1 packet of Italian dressing seasoning
- 1 packet of au jus sauce mix
Instructions
- Place all ingredients in crockpot on low.
- Cook for 8-12 hours.
- Remove from crockpot and rest for 15 minutes.
- Slice and serve with homemade gravy!
